Mithila famous makhana kher

Mithila famous  recipes - Makhana ki kheer
 Essential Ingredient  - 1 liter milk 1 cup Makhane 1 tsp Ghee 1 tsp Chironji 10 cashew nuts 10 almonds 1 tsp cardamom powder ΒΌ cup sugar. 

Method Making Makhane Ki Kheer

(1) First cut cashews and almonds finely and keep them aside.

(2) Finely chop the makhanas and then grind them coarsely in a grinder.

(3) Now heat ghee in a heavy bottom pan and fry the makhanas for 1 minute. 

(4) Heat 2 cups milk/500 ml in a sauce pan or a thick bottomed pan.
Stir at intervals so that the milk does not scorch from bottom.
Let the milk come to a boil

(5) While the milk is getting heated up, reserve 1/3 cup makhana and add the remaining in a grinder or blender jar. Add cardamom seeds from 4 cardamom pods along with a pinch of saffron strands.
Grind to a fine powder.
(6) Allow the milk to cook until the butter is completely melted.  In a gap of 5-7 minutes, keep stirring the kheer so that it does not stick to the bottom

(7)When the milk comes to a boil, then add 3.5 to 4 tbsp sugar or add as per taste.

(8)Now add chopped nuts to the kheer and mix it well and after 5 minutes add cardamom powder and turn off the gas.  

(9)Makhana kheer is ready.  Keep it in the fridge to cool down.  
(10)Serve it hot or serve after it cool .
